Mac and Cheese

*This is not by any means healthy, but sometimes you have to enjoy yourself. : )
Mac and Cheese is one of my favorite foods!  I am not the best at making it, but I think I do ok.  Below is my mac and cheese recipe.  

This recipe will make one large aluminum roasting pan. 

The recipe can be cut in half to accommodate a smaller portion.

Ingredients:
  • 1  large aluminum rosasting pan
  • Non-stick spray
  • 32 ounces of macaroni noodles (large or small)
  • 10 cups of half and half (can use regular whole milk if you prefer)
  • 1 large box of Velveeta cheese
  • 1 8oz block of colby cheese
  • 1 8oz block of jack cheese
  • 1 8oz block of medium cheddar cheese
  • Half stick of real butter 
  • 1 egg ​

~Preheat the oven at 400 degrees

~Spray the aluminum pan with non-stick spray and set it to the side.


~Cook the noodles as directed on the package. Drain and rinse. Set them to the side.


*If you prefer firmer noodles, you can boil cut the boiling time down for 1-2 minutes. Remember, the noodles will cook while they are in the oven.

~Put butter and half and half in a large pot. Whisk the egg into the milk before turning on the heat.

~Heat the butter and milk on medium heat.  
~Cut up all the cheeses in chunks and put in the warm milk.  (If you would like to add cheese to the top, you can grate half of the colby, jack, and cheddar to sprinkle on the top before baking.)

~Turn up the heat and stir continuously until all of the cheese is melted.

~Pour the noodles into the pot and stir gently.

~After all of the noodles are completely coated with cheese sauce, poor the mixture into the aluminum pan.

~Bake in the center of the oven uncovered until golden brown

~Remove from the oven and let stand for 20 minutes. ​

No Meat Challenge Update

So, I haven't given an update in a very long time.  It has been over five months since I started my challenge and I must say that I have been doing pretty well overall.  I did pick up on eating shrimp and fish.  I haven't really missed the other meats.  The only things I can say that I miss are flavored chicken wings (hot, teriyaki, and lemon pepper) and chicken salad sandwiches from The Honey Baked Ham.

So, I am really wanting to try something different than my twists.  Don't get me wrong, I love my twists, but it's really taking a lot of time to twist my hair, so I want to try something different,.  Well, I decided to blow my hair out using low heat.  I thought it would be a little easier than twisting, but I was wrong.  It took alllllllllllll day!  Anyway, I did a quick length check just so you can have an idea of how much my hair has grown since June.  Remember, I cut my hair in June of 2013.

No Meat Challenge: Days 22-29

I just wanted to give a quick update.  I have been meat free for 30 days.  I think I may do two months, then start incorporating seafood.  I am not trying to be a vegetarian, but I do want to give my digestive system a rest.  I will give a more detailed post in a few days of my challenge.

No Meat Challenge:  Days 14-21

I apologize, but I have been really busy.  I haven't really been doing anything different from the other days.  I am still eating a yogurt for breakfast.  Lunch is normally a protein shake or Kashi cereal with almond milk.  Dinner is normally soup, fried rice, or salad.  I did try something different on last Sunday.  I stuffed some sweet peppers with cheese, onions, spinach, and peppers and cooked them.  They were pretty tasty!  I also stuffed some mushrooms with the same mixture.  They were tasty as well.  I don't think I will use frozen spinach the next time.  It made the mixture too watery.  Anyway, I will give you an update tomorrow!

Oh yeah!  Tonight I am eating a Veggie Lovers pizza from Pizza Hut!

Saturday:

I have been super busy with my job, so I didn't get a chance to update yesterday.  But, I ate the same thing yesterday and today.
For breakfast I ate a yogurt.
For lunch, I ate Kashi Cereal with Almond milk.
For dinner, I ate roasted potatoes, brussel sprouts, and onions.

Today I didn't eat a whole lot.  I didn't even do any snacking today.

*For lunch, I had hummus and crackers.
*For dinner, I had some more homemade fries.  
I cooked some roasted vegetables for dinner this week.  I am finally getting back into the swing of things!
