Mac and Cheese

*This is not by any means healthy, but sometimes you have to enjoy yourself. : )
Mac and Cheese is one of my favorite foods!  I am not the best at making it, but I think I do ok.  Below is my mac and cheese recipe.  

This recipe will make one large aluminum roasting pan. 

The recipe can be cut in half to accommodate a smaller portion.

Ingredients:
  • 1  large aluminum rosasting pan
  • Non-stick spray
  • 32 ounces of macaroni noodles (large or small)
  • 10 cups of half and half (can use regular whole milk if you prefer)
  • 1 large box of Velveeta cheese
  • 1 8oz block of colby cheese
  • 1 8oz block of jack cheese
  • 1 8oz block of medium cheddar cheese
  • Half stick of real butter 
  • 1 egg ​

~Preheat the oven at 400 degrees

~Spray the aluminum pan with non-stick spray and set it to the side.


~Cook the noodles as directed on the package. Drain and rinse. Set them to the side.


*If you prefer firmer noodles, you can boil cut the boiling time down for 1-2 minutes. Remember, the noodles will cook while they are in the oven.

~Put butter and half and half in a large pot. Whisk the egg into the milk before turning on the heat.

~Heat the butter and milk on medium heat.  
~Cut up all the cheeses in chunks and put in the warm milk.  (If you would like to add cheese to the top, you can grate half of the colby, jack, and cheddar to sprinkle on the top before baking.)

~Turn up the heat and stir continuously until all of the cheese is melted.

~Pour the noodles into the pot and stir gently.

~After all of the noodles are completely coated with cheese sauce, poor the mixture into the aluminum pan.

~Bake in the center of the oven uncovered until golden brown

~Remove from the oven and let stand for 20 minutes. ​

Biscoff Protein Shake Recipe

Protein shakes are a great way to help you get your daily protein intake.  Sometimes, I use them as meal replacements.  I normally purchase the pre-mixed protein shakes from GNC, but I decided to try to save some money.  So, I have been mixing my own protein shakes.  


Below is a quick and easy protein shake recipe.  I hope you enjoy : )


What You Will Need:

*8-10 ounces of unsweetened almond milk.
*1 scoop of protein powder
*1 Table Spoon of Biscoff spread (Biscoff can be found in the peanut butter section of any grocery store.  It comes in smooth or crunchy.)

*A blender
What To Do:
Blend all of the ingredients really well.  If you need to take the shake with you, just pour it into a shaker cup for later.

Cheesy and Easy Squash and Zucchini Casserole

Let me start out by saying that I absolutely LOVE to cook.  Due to my lifestyle, I never get a chance to cook.  Well, I finally got some time to cook a home cooked meal.  One of the items I decided to make was a squash and zucchini casserole.  I must say that it turned out great!  It seemed to be even better the next day.  If you love squash and zucchini, I suggest you try this casserole :)

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Ingredients:

There aren't many ingredients you will need.  Remember, the recipe is easy!
*2 pounds of squash
*2 pounds of zucchini
(You may do all squash or all zucchini..)
*2-3 sweet onions
*1-2 Tablespoons of REAL butter
*3 table spoons of olive oil
*8 ounces (1 cup) of sour cream
*1/4 cup of half and half
*3 large eggs
*4-8 ounces of cheese (preferably Parmesan, cheddar, or a combination)
*1 sleeve of butter crackers (crushed)
*1 teaspoon finely chopped thyme leaves (optional)
*salt and freshly ground black pepper for taste

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~

Preparing:

*Preheat your oven to 350 degrees.  
*Butter a 13x9 baking dish.  You may use cooking spray instead.

Cut the squash and zucchini into thin slices.
Cut the onions into thin to medium rings.

Saute' the onions in the olive oil and butter for about 5 minutes.

Add the squash, zucchini, salt, pepper, and thyme.  Cook an additional 20-25 minutes.

Using a draining spoon, place the squash, zucchini, and onions into a buttered 13x9 baking dish.  DO NOT DISCARD THE JUICES!

In a separate mixing bowl, whisk the half and half and eggs together.  Add the sour cream and whisk until smooth.  Add the left over juices.  Finally, add the cheese a little at a time.

Pour the cheese mixture over the squash, zucchini, and onions.  Be sure to manipulate the vegetables so that the cheese mixture is evenly distributed.

*Bake the casserole for 25-30 minutes, or until the cheese sauce sets.  
*Sprinkle the cracker crumbles over the casserole and bake an additional 10 minutes, or until the cracker crumbles are golden brown.

Recipes:  Brussel Sprouts and Bacon

Brussel sprouts and bacon is a match that I have grown to love.  My friend Dixie turned me on to it.  Of course, I had to add my own special twist!

Ingredients:
A container of brussel sprouts 
1-2 large sweet onions
1 package of sweet peppers
1 package of pre-cooked bacon (6-8 slices)
1/2 cup of olive oil
Tony's Creole seasoning salt



Preheat the oven to 400 degrees.  Cut the brussel sprouts and sweet peppers in halves.  Cut the onions into large chunks.  Slice the bacon into 1 inch pieces.  In a large bowl, toss all of the brussel sprouts, peppers, onions, and bacon in the olive oil.  Season with the Tony's Creole seasoning (or any seasoning of your choice).
Spread the mixture onto a baking pan (or cookie sheet) and bake for 30-40 minutes.
